Epic peanut butter granola recipe | VEGAN and GLUTEN FREE

In today’s post, I share a super granola recipe with you. It takes probably less than 20 minutes to make it and it’s extremely delicious. So let’s get started!

To be honest, I’ve always bought granola in supermarkets. A couple weeks ago we went to Scotland, and I thought it would be a good idea to bring some granola with me. It is a perfect snack, but you can also eat it with smoothies, oatmeal, fruits, so it’s very versatile. So I created this recipe!


  • 2 cups of gluten free oats

  • 1 cup of dried fruit, I used cranberries

  • 2 cups of mixed nuts

  • 1 tbsp coconut oil (solid)

  • ½ cup of nut butter (I used peanut butter because it is cheap and I love it)

  • ¼ cup of pure maple syrup

  • 2 tsp cinnamon

Extra tip:

Make sure you use ingredients without added sugar or oil. Use pure maple syrup, 100% peanut butter without added oil or sugar and dried fruits without added oil. You can also use organic ingredients to make it healthier.


First mix the dry ingredients, the mixed nuts, the cranberries, and the oats and blend them in a food processor a bit. Preheat a pan and add the coconut oil, if it’s melted, add the peanut butter and the maple syrup and stir them well with 2 tablespoons of cinnamon. Finally, add the dry ingredients in the mix, and stir them until it’s golden brown and well coated.
