Since it's less than a week until Christmas, I thought I share a Christmas themed recipe with you today.
First things first, I have to admit, this year was hard for me to decide what kind of dessert I'd like to make for the holidays. There are so many amazing vegan recipes out there, I have only one problem: we live in a ridiculously tiny house. Which makes the huge Christmas cooking a little bit harder. And also, we work a lot before the big day, so I thought I really don't want to spend my whole day in the kitchen.
I make energy balls every once in a while. It is very easy, doesn't require any special kitchen tools, not too expensive, and there's a ton of variation out there. So I added a few ingredients, to make it christmassy, and voilà!
For this recipe I used fresh medjool dates, which I highly recommend, if you have access to it. I've never tried it before, but I spotted it in one of the local supermarkets. The truth is, it is a lil bit pricey, but I thought for Christmas, it's worth a try! Oh my GOSH, they were incredible, so much more flavour then in the dried one, I'm totally addicted!
First, soak the dried cranberries for about 2-3 hours. If you use dried dates, you might wanna do the same with them. Add the cranberries and the dates into a fruit processor with the spices, and blend them well. Add the ground almond and stir to combine. Roll the dough into balls, and then place them into the fridge for a couple of hours. I rolled them into some almond flakes, but you can use desiccated coconut, or cinnamon or even some chocolate flakes.
I love energy balls, because it's an easy snack, for work, for travelling or even for cozy rainy days!
